Boil eggs: put egg in the cold water and started on high heat until water starts to boil. Turn off the heat and keep the eggs in the hot water for exactly 5 min. Then remove the eggs and cool it in tap water. Change the water if the water is warm.

Fried Rice Cake: Boil the rice cake in the boiling water for around 2 min. Drain. Put aside. Heat fry pan until it is dry, pour cooking oil (peanut oil is preferred), wait for around 1 min until oil is hot, put in chopped onion or green onion to make the oil fragrant, may put sliced ginger too. Then put in the marinated shrimp (with cooking wine and salt, white pepper) or beef (with cooking wine and Korean BBQ sauce), cook until shrimp is curved or the red color in beef disappeared. Transfer the shrimp or beef on a plate. Pour more oil in the frying pan if needed (no need to wash the pan), put the sliced vegetables (carrot, Chinese Cabbage, radish, mushroom, choose whatever you like), cook 1 or 2 min, add soy sauce, cook 1-2 min. Then add chicken broth if like. add rice cake, shrimp or beef. If spinach is desired, it is better to put the spinach in hot water, then drain, before adding them to the cooked vegetables . Taste, and add salt if needed. Ready to serve.

Homemade Pizza: 1. dissolve yeast 1 tbsp in warm water 1 cup. Add a tbsp sugar. Wait until it rises.
2. two bowls of flour, add the yeast water, one tsp salt, peanut oil or olive oil 2tbsp, 1 tsp garlic powder, and suitable amount of warm milk to make the dough. Cover. Sit until the dough rises.
3. put the dough into the desired shape. Edge should be higher than the middle. Put it in the oven, 350 degree, around half an hour, or until the surface is hard.
4. Turn the dough over. Continue for another 15 min, or until the surface is hard.
5. Put a layer of cheese on top. Continue for another 15 min, or until cheese melts.
6. Prepare the veggies and meats. Put them in a bowl, add suitable amount of salt,pepper, Italian seasoning and oil.
6. Take out the pizza. Add tomato sauce, spread the veggie and meat mix. Then top with cheese. Bake at 430 degree for 15 min. Cut and serve.

Wheat Gluten with Four happy companions 四喜烤麸:
1. Pour hot water over dried wheat Gluten, add salt. Let it soak for 30 min. Then squeeze water out. Repeat the process twice or more times until you cannot smell anything. After it is thoroughly washed, break them into smaller pieces using hand.
2. Wash dried Shiitake (香菇) with cold water, then pour hot water and let it sit for 30 min or more until they are soft. Soak dried Wood Ear-shaped Black Fungus (木耳) and dried daylily flower (黄花菜) in warm water. Once all three items are washed, cut into small piece
3. Turn on the heat, in a large skillet, add oil (need plenty), medium heat, then add the washed gluten. Stir fry until oil is absorbed, and the gluten has golden color. Turn off the gas. Transfer the gluten in a bowl
4. Same skillet. Add oil. Add peanuts. Stop the heat when it bubbles. Transfer the peanut out, leave the oil in the skillet.
4. Same skillet. Add 2 pieces of star anise, shiitake, stir fry for a few minutes. Then add fungus, daylily. Stir fry. Then add some soy sauce, chicken broth, oyster sauce, white pepper powder, gluten. Turn to simmer once starts bubbling. Stop the fire when liquid is gone. Add peanut. Adjust taste with salt. Serve.

Soybean Milk 豆浆:
1. Soak soybeans (1/4 cup) at room temperature overnight. The soaking water may be used to water the plants. Remove the bean skin and throw away the beans which breaks for the skin has dark color
2. Wash the beans twice. Then boil the bean in 1 cup of water for 20 min.
3. Transfer the boiled bean into blender. Measure the water volume and make sure that it is 1/2 cup. Add more hot water if needed. Add 1 teaspoon sugar. May add more if desire. Blend for 2 min.
4. Drink immediately. Put any leftover in the fridge.

Gong Bao Chicken (宫保鸡丁)
1. If need to prepare fried peanut, make it first, following the recipe above.
2. Cut chicken breast meat into small cube. Marinate the meat in a mixture of salt, soy sauce, cooking wine, and starch. Either leave it in the fridge overnight, or at room temperature for 30 min before cooking
3. Before cooking, prepare the sauce mix: sugar, salt, soy sauce, vinegar, cooking wine, starch, broth. If prefer the taste of sweet sour, add more vinegar and sugar. Leave it aside. Also prepare the vegetables to go with the dish, which can be carrot or cucumber cubes
4. Pour plenty of oil (more than sufficient) into the frying pan, transfer the marinaded chicken breast (leave the marinate sauce out at this step) into the pan once the oil is hot, quickly fry for several times. Then take out the chicken. Leave the desired amount of oil in the pot, and pour the extra out.
5. Turn on the heat again, put the coarsely chopped dry red pepper, Sichuan pepper (花椒), fry a few times, then add chopped garlic and ginger, fry a few times until fragrant, then add chicken breast, fry, then add the marinade sauce and the sauce mix, fry. Add carrot, fry. When it is almost done, add cucumber and fried peanut. Stir fry several times. then turn off the heat. Serve.

Walnuts 核桃仁
1. 2 cups of walnuts, 1/4 cup sugar, 1/2 cup water, 1/4 teaspoon salt, one piece of star anise, heat until boil then medium heat until liquid is gone. Keep turning the walnuts during this process to avoid burning the nuts

Home-made noodle recipe
1. Take eggs from the fridge and leave them at room temperature for at least 30 min before cooking.
2. 500 gram of soft wheat flour (or better: 250 g soft-wheat flour mix with 250g durum-wheat flour) mix with 5 eggs, mix. Do not add salt.

Dumpling fillings: 饺子馅
1. Mutton dumplings: Add white pepper power, sugar, salt, oil, sesame oil, chopped carrots, minced garlic.

Dry Fried String Beans 干煸四季豆
1. Remove the two hard ends of the string beans, wash

Avacado Paste
1. Leave avocado at room temperature until the shell is soft, then put it in the fridge.
2. In a large granite mortar, put 2 pieces of black pepper, use Pestle to crush them into powders. Then add one piece of garlic and crush it to juice.
3. Peel avocado and put it in the mortar, crush it. Add salt, mix with pestle. Transfer to a bowl, decorate with cilantro leaves. serve.

Napa Kimchi 韩国泡菜
Materials:
  • 1 Napa Cabbage 大白菜 一棵 (also called Chinese Cabbage; large size, around 2 kg)
  • radish 1 (large size) 大白萝卜一个
  • Very fine red pepper powder: 0.5 cup 韩国店卖的很细的红辣椒粉
  • scallion: 5 stalks, minced 大葱 五段
  • white onion: 1, grind or chopped 白洋葱一个,切丁
  • garlic: 10 pieces, minced 10 拌蒜 切碎
  • Chinese chives: 8 stalks, cut into 3 cm size 韭菜8根,切成小段
  • fish sauce (anchovy or shrimp): 0.25 cup 鱼油
  • sugar: 0.25 cup 糖
  • sea salt: to soak the Napa 盐
Note: Make sure that everything contacted is oil free.
Steps:
1: Cut Napa into half then quarters
2. mix salt and water 1:5. Put the cut napa in the salt water for 3 hours, Switch top and bottom, then continue to soak for 2 more hours. Wash it 2-3 times and drain well.
3. In a large bowl, mix fish sauce, grounded onion, red pepper powder, garlic, scallion, sugar and mix well (better wear gloves and mix it with hands).
4. Slice radish, then slice again into strips. Transfer them to the sauce mix and mix well. May add little salt to the mix. Mix the cut chives too.
5. Wear gloves. Put the mixed radish sauce between each Napa's layer.
6. Put napa in a container and press well, to let air out of each layer. May leave it at room temperature for several days until you can sell the sour or kimchi flavor, then leave it in fridge. I usually leave it at room temperature overnight then transfer it to fridge.
山东名菜:葱烧海参 Sugar Braised Cucumber with tall Shandong Green Onion

Materials:
  • 8-10 sea cucumbers
  • 2 tall Shandong green onions, cut into chunks with length similar to sea cucumber
  • 8 pieces of garlic, slice
  • a chunk of ginger, slice
  • sugar 2-3 teaspoons
  • cooking wine: 1 cup and two tbsp
  • white peper 2 tbsp
  • soy sauce one cup and one tbsp
  • cooking oil 8 tbsps
  • starch 1 tbsp
  • 1 Chinese parsley (cilantro)
Steps:
1: Soak the sea cucumber in filtered water in the fridge for 3 days, change the water everyday. Make sure that the container is oil free.
2. Put the sea cucumber in a large pot (oil free) with plenty of water, boil for 30 min. Cool. Then leave in the fridge until ready to cook. Do not leave it there for too many days though. It is better to cook it within a few days.
3. Prepare the seasoning oil: In a fry skillet, at max heat, add 8 tbsp cooking oil. When oil is hot, put green onion, ginger, garlic, cilantro. Stir fry until the onion turns to brown. Throw away the cilantro. transfer the remaining stuff into a container with lid. Water Steam the container for 10 min.
4. Blanch sea cucumber: In a deep pot, add plenty of water, put the sea cucumber, one cup of soy sauce, one cup of cooking wine, white pepper, 2 teaspoon salt. Max heat until water boils, then reduce the heat to simmer, continue for a few minutes without lid.
5. Caramelize sea cucumber: Use the same skillet as in step 3, at median heat, add plenty of oil (enough to cover the sea cucumber). When oil is 60% close to the boiling point, add sea cucumber, quickly stir once or twice, turn off heat. Take out the sea cucumber. Pour out the oil, leaving around 1 tbsp for the next step.
6. On medium heat, add sugar, keep stirring to avoid burning the sugar. Sugar should melt first, then bubble shows, then bubble slowly disappears. I did not see the sugar bubbles, not sure if I used the wrong sugar types (brown in stead of white). Add sea cucumber. Stir 2-3 min. Add 2 tbsp cooking wine. Turn to max heat. Then add 2 tbsp water, 1 tbsp soy sauce, 1 tsp sugar, 1 tsp salt. Stir until the liquid becomes sticky or almost disappears. Then add green onion from the seasoning oil, stir a few times, add starch. Stir a few times. Add the seasoning oil. Stir.
6. Turn off heat. Put the onion at the bottom of the dish, sea cucumber on top. Drizzle the remaining sauce in the skillet onto the sea cucumber. Ready to serve.

Cold dish: Pig Ear 凉拌猪耳
1. Clean pig ear under tap water. May add salt then white pepper in the water to help the cleaning.
2. In a large pot, add cleaned pig ears, plenty of water, one chunk of crushed ginger, several pieces of star anise, one piece Cinnamon stick 桂皮, several bay leaves. Max heat and boil for around 30 min. Check by poking the ear with a chopstick. Turn off the heat when chopstick can easily pass through. Take out the ears, cool, then slice them.
3. Mince garlic, green onion, cilantro, red peppers. Slice the pig ears. Put them together. Then add sesame oil, soy sauce, vinegar, sugar. Mix and serve.
4. It may be kept in the fridge for several days, whihc can be taken out and serve without heating.

Cold dish: Green Bean Jelly Salad 凉拌绿豆凉粉
1 cup green bean powder, mix with same volume of water (1:1).
2. Put 4.5 cups of water in the pot. Heat at high until close to boil (around 80oC, a few min after bubbles start to appear at the bottom), turn to med heat. Pour in the mixture from step 1 slowly, while stirring with a pair of chopsticks. Keep stirring quickly until the mixture becomes thick, turn to low heat. keep stirring until the mixture becomes translucent. Turn off the heat.
3. Take a large pot which can hold the pot in step 2, pour cold water in. Then put the pot from step 2 in the cold water to cool down the jelly. Change water when the water is warm. Cool until when poke a chopstick into the middle and come out clean. When the outside shell is hard, may add some cool tap water into the pot with jelly directly to speed up the cooling process.
4. Mince 1 piece green onion, 2-3 stems of parsley, smash 3-4 pieces garlic. In a fry pan, add oil and heat, then add around 10 pieces of Sichuan Pepper 花椒, stir fry a little. May add 1-2 pieces of hot pepper. Stir fry. Turn off heat. Then add the minced green onion, parsley, garlic. Add vinegar, say sauce (3 vinegar:1 soy sauce), sesame oil, salt.
5. Slice the desired amount of green bean jelly, and mix it in the frying pan. May add sliced cucumber or Chinese cabbage. Only sue the most inner yellow leaves from Chinese cabbage for the salad. The outer white leaves may be use for hot dish or dumpling fillings. Transfer the remaining green bean jelly into a container, add water, and keep it in the fridge. Consume it within one week.

Tomato Fry Cauliflower 西红柿炒白菜花
1. Break cauliflower into small pieces with hand and small knife.
2. Boil water, put cauliflower, boil for a few min, with two whole tomato.
3. Take out tomato, and put them in cold tap water. Then peel the skin, and cut it into small pieces.
4. slice onion or garlic.
5. Heat pan on high, until no water in it. Add oil. 1 or 2 min, add onion and black pepper powder, 1 min. Add tomato and stir fry. Then add cauliflower, stir fry. Add salt. Mix. Serve.
Broccoli Cheese Soup
1. Materials: 1.5 tbsp butter, 1 medium yellow onion, 3 garlic cloves, 1 lb broccoli, 1 medium potato, 3 cups of water, 2-4 ounce cheddar cheese, may add 1 or 2 small red pepper. Slice onion and garlic. Dice potato, then soak potato in water (to prevent from oxidization).
2. Broccoli: separate stems from the florets part. cut into small pieces.
3. Pot: add butter heat until melt. Then add onion, garlic, red pepper, salt, black pepper powder, stir, then add broccoli stalks and potato, stir, then add water, salt, cover, medium heat until potato is soft (~20 min). Stir occasionally. Then add half of the florets. Heat for 2-3 min. Transfer everything to blender. Blend. Then return to the pot. Heat at medium, add the other half of the florets. Heat (4-7 min). Then add cheese. Stir. Serve. May add cilantro or green onion for decoration.
Tomato Fry Eggs 西红柿炒鸡蛋
1. Materials: 3 tomato, 6 eggs, 3-5 garlic cloves, optional: green onion or cilantro. Mix all the eggs in a bowl using chopsticks.
2. Pan, heat until no water, add 4-5 tbsp oil, high heat, add half garlic. 1 min. Then pour in the eggs. Keep stirring until no liquid. Put eggs back to the original bowl .
3. Same pan. Add one tbsp oil. Then the remaining garlic. Then add the tomato and cook until liquid comes out. May add 3 tbsp chicken broth. Add 1 tsp sugar. When the tomato is very soft, add the eggs, add salt. Stir. Add minced green onion and cilantro. Mix. Serve.
Steam Rice
1. Wash rice several times until water is clean.
2. Put the rice in a bowl or plate (heat-safe), then add water. Rice to water ratio should be: 1 (rice) : 1.3 (water). You can make it 1:1.5 if you like your rice soft. Pre-soak the rice for at least 10 minutes.
3. Put cold tap water in a steamer with middle rack and lid. Make sure that you put sufficient amount of water, so that it will not run dry during the steaming process. Put the bowl on the rack. Cover the steamer. Heat on high. Heat for 30 min after you see steam comes out of the steamer. Wait for 5 more min before removing the lid.
Banana Bread
1. Preheat oven. 2-3 Super ripe banana, peel the skin. It is OK if the skin is totally black, as far as the inside is still in shape. Then add 1 egg, 1 tsp baking soda, 1/4 tsp salt, 1/2 cup sugar, 1 tsp vanilla extra, add 1.5 cup flour, mix. Then add 1/3 cup melted butter. Mix.
2. In a baking pan, smear a thin layer of butter on the bottom and the side. Then pour in the mix from step 1.
3. 400 oF, 25 min.
Red Bean Paste 红豆沙
1. Soak 250 g red beans in cold tap water for 1 hour. This will make one bowl of red bean paste. Wash several times. Throw away any bad one if you spot any.
2. In a pressure cooker, add red beans and water (1:2). Cook for 0.5 hr. Then add cube sugar until sugar is melt.
3. Blend everything in a blender. Then transfer them to a non-stick frying pan. Add some oil. Cook under low to med heat. Keep stirring. When oil disappears, add more oil. Cook until the paste is thick. Turn off the heat. Ready to be used for red bean steam dumplings or other dessert. The left over may be kept in the fridge.
东坡肘子
1. 猪肘子冷水中,加料酒和盐,煮开,倒掉水。重复。再用水清洗肘子。用刀在肘子上斜划。
2. 猪肘子放水中,加冰糖、沙姜、草果一个,酱油,一粒大料。水量刚没过肘子或者略少。煮开后小火约三个小时,等到汁快收干。关火。
3. 盘子上摆一层生菜叶,上面摆肘子。上桌。
炸肉丸子
1. 肉馅,加盐,搅拌至感觉到粘。加蛋、糖、水,搅拌到水被吸收。加姜末、白胡椒粉,拌匀。团成一个个球状。
2. 油,小火炸四分钟。当天不吃的,放冷冻。
皮蛋瘦肉粥
1. 猪肉片过热水焯一下。糯米大米梗米混合(半杯左右)煮到水开。中火继续。加入切丁的肉片和皮蛋。中火煮沸。小火20-30 分钟。煮到浓稠

    1. Use steam pot, When water is boiling, put the corns in a tray. Boil for 10 min for yong corn, 14 min for old corn
    2. may serve directly, or put some butter on the corn。
    home-made yogart
    1. Take one commercial yogurt out and leave it at room temperature. Boil some hot water. Use the hot water to disinfect thermometer probe by dipping the probe into the hot water and leave there for a few min. Fill the containers which will store the yogurt with hot water. Screw the cap on. Wearing heat resistant gloves, turn the containers up and down several times. Leave the containers there with cap on and water inside until the next day when ready to store yogurt. Also disinfect any utensils (small and large spoons) which will come into contact with milk/yogurt, by soaking them in hot water before use.
    2. In a pot with lid, heat milk on high. When close to boiling, reduce heat to med then to low. keep stirring. Heat for a few minutes once milk boils. Make sure to reduce heat to lowest, and keep stirring so that milk will not boils over
    3. Cool milk at room temperature and monitor the temperature constantly When milk cools to 43oC, add a tbsp of yogurt into the pot。Mix with large spoon. Keep the spoon in the pot, then cover the pot with lid. Leave the pot inside the oven with light on. No need to turn on the heat.
    4. The next day, check the thickness of the milk. If it is thick enough, transfer them to the disinfected container using either the large spoon or the small spoon, depending the opening of the container.
    汤圆的糖芯做法:
    1。准备白花生米一把,压碎成小颗粒。
    2。取一个clementine (小橘子),取橘皮洗净后切成细小颗粒,越细越小。
    3。取半碗蔗糖,1/3碗黑芝麻。
    4。热锅,然后往里加两勺菜油,待热后加两勺猪油
    5。油热烫后(不要太烫,不要冒烟),往里倒入黑芝麻和花生颗粒,炒匀闻香后倒入白糖碗中,加桂花一大把。搅匀。
    6。凉后盛入瓶中密闭保存。

    红辣椒油的做法:
    1。 取朝天椒或其他真辣的晒干的红辣椒,打磨成小片,可以粗点没关系。 先准备好辣椒两斤
    2。准备小葱一把,老姜2块拍破切片,干花椒一把,八角一把、草果10颗、白扣一小把(没有就用桂皮或其小回香)。
    3。先将食用油一大瓶(4升)倒入锅中,待油温到100摄氏度左右(不要冒烟),放入姜葱炼油,姜葱飘出香味炸到黄色捞出姜葱,再放入八角、草果、白扣在锅里炸几分钟。此时关掉火,放入花椒,过约5分钟后放辣椒面炒一会,自己都能闻到香味就可以了。记住不能开火,或小火即可,防止煳味。
    4。 将辣椒油倒入盆中密封放3天后,捞出香料。再加热到约100摄氏度左右,倒入二两白芝麻,芝麻香出来后转入盆中密封放一至三天。

    妈妈凉面的做法
    1。提前一天准备姜蒜:一把算和一块姜,切成0。5-1立方厘米大小,混在一起放入一塑料杯中(一次性的),用赶面棒砸烂成浆,倒入部分瓶装水,刚好盖过姜蒜表面就好。密封过夜。
    2。准备好一种香菜(改天我去买来拍照,名称cilantro,美国店里也有)。这个也很关键。
    3。准备好电风扇。
    4。取水面(其实美国的方便面也挺好用),烧一锅水,水沸后加面条,只煮七分熟,保持硬度,倒入漏瓢,等水沥干后置于一个大锅中
    5。往面上加两勺橄榄油,一小瓢芝麻油,开电风扇吹,两手用筷子挑面搅匀,别让面条绞在一起。没有电风扇会很累。
    6。取一碗,将姜算汁倒入,加酱油(比如万家香或其它牌子),加点胡椒盐,醋,白糖,可以加点味精,搅匀后,加一小瓢芝麻油和部分花椒油。
    7。根据你能吃辣的程度,加部分红辣椒油。
    8。将调好的蘸汁倒入凉面中,再放切好的香菜,拌匀即可!

    炒长豆角(豇豆)

    煎饼果子(豇豆)

    a. 和面糊的时后,不用一次将所以的水都倒进面粉中,先倒入一部分,调成很稠的面糊,然后加剩余的水,这样面糊很快就会调开,没有面疙瘩。如果一次性倒入水,产生很多面疙瘩,要花很长时间把疙瘩捻开。
    b. 摊煎饼时,开非常小的火,把煎饼摊开后再将温度调高,这样摊的煎饼均匀,也容易摊开。如果锅的温度高,将面糊倒入很快会凝固,不容易摊开了。

    德州扒鸡

    夫妻肺片的主料应该有牛头皮、牛心、牛舌、牛肚、牛腱,牛筋。但一般自己做有牛腱,牛筋就成了。其他的料要是好买的话不妨也试试。在美国,一般超市里是没有牛腱(Shank),牛筋的(Tendon),但一般在华人超市有的买,实在找不着的话,用一般牛肉也成,用Chuck的部位就好啦。我做过一回牛头皮(beef cheek meat)的, 口感也十分好! 通常在家做夫妻肺片只是将牛肉卤至熟而不烂。但要做的专业,牛肉必须是腌制过的。1千克牛腱用12克盐和0.5克硝酸钾 (potassium nitrate, Saltpeter)放冰箱里腌5天。准确的用量是第一个成功的关键! 云南过桥园做的夫妻肺片牛腱子肉色红润,我以前总是百思不解,肉的红色是哪儿来的。后来在百度的谱子上看到要用硝盐,又查考了用硝盐腌肉的资料,经过多次试验终于使其恰到好处! 小窍门: 牛腱太大,难以腌透,需要从中切成两块。将牛腱装入自封袋,洒上盐和硝酸钾,挤出空气,放冰箱。每日揉一揉,使牛腱腌的均匀些。 腌好的牛腱子和牛筋(不腌)洗净后飞水。高压锅中加水没过牛肉,加料酒,姜块,葱结,八角,花椒,桂皮,小茴等香料,连水带料,每公斤加10克盐. 压至熟而不烂(35-40分钟),烂了就不容易切片了.煮好牛腱子和牛筋冲洗后在冰箱冷藏。冷藏后牛腱牛筋容易切片。彻底冷却后取出切薄片。

    花椒、辣椒碎、蒜末、蚝油、生抽、有芝麻就放点,热油一浇就好了
